Chefs Tim LaBant and Michelle Greenfield have sniffed out black truffles directly from Italy for this meal. But that's not all--there will also be white truffles! These rare little fungi from the north of Italy have so much flavor and aromatic intensity that their serving size is measured in grams. We look forward to offering them in a four-course tasting menu.
To accompany these courses, we will have four extremely limited wines, also from the Piedmont region. They are all nebbiolo and all from top producers. Here is the wine lineup:
* Ferrando, Canavese rosso, "La Torrazza" 2017
* Azienda Agricola Noah, Bramaterra, 2012
* De Forville, "Loreto" Barbaresco, 2015
* Brovia, Barolo, 2015
Tyler Colman, Ph.D., selected the wines and will lead us in a tasting with each course. Tyler is the author of two wine books and has contributed wine stories to the New York Times, Food & Wine, Wine & Spirits and the World of Fine Wine and has taught wine classes at NYU and the University of Chicago. He was a finalist for a James Beard award for his writing. He is the wine director for our sister restaurant, Parlor Pizza.
This spectacular evening is not to be missed. Advanced purchase required.
